Chef David Gray
Our Chef, David Gray, is a 1992 graduate of The Culinary Institute of America. Also an avid skier, he moved to Aspen, where he spent seven years honing his skills in some of Colorado's premiere restaurants and resorts, such as The Little Nell Hotel, a five-star hotel in the heart of Aspen.
After moving to the Denver area to help an associate open his own restaurant, David continued his culinary journey at The Inverness Hotel, where he took the role of Banquet Chef.

Never satisfied with the status quo, David moved on to the Sous Chef position at the Loews Denver, where he helped transform its culinary reputation. While there, he became interested in healthy, organic techniques, which led him to the Sunflower restaurant in Boulder, a long-time favorite of locals. We now proudly offer David's cuisine at the Niwot Tavern.
